gl-1 grainy pic during the day. gain set to zero

gl-1 grainy pic during the day. gain setto zero.

I set the exposure, shutter speed and gain of zero mannually to film during the day. I thought everything looked great but when i checked the footage on TV monitor, some areas looked really grainy. For example, the trees in the background was covered with tiny dots that flashed. It just didn't look really clear. It almost looked over-sharpened. After thinking for a while, I came up with a possible problem. Does having the sharpness level high in the menu cause grainy picture in the area or subjects that have lots of details? also why are the images different between camera's viewfinder and a tv monitor? What do I have to pay attention in the future? Thanks for reading.
